Gekkeikan now brings the newest technologies to a brewing process that is nearly 2,000 years old and continues to strengthen its marketing position in the wake of growing demand for sake worldwide. Why was Folsom selected? Just as Fushimi was "discovered" centuries ago, Folsom was found to offer just the right conditions: high quality water and an abundance of rice- the perfect setting for a skilled brew master backed by over three and a half centuries of experience.

Tasting Notes

Chef Morimoto took great care when selecting a good quality sake worthy enough for you that it bears his name on his own inspired label. This Junmai-Shu is made from premium grade Yamada Nishiki rice which has been polished to 70% of its original size and brewed with famously pure "Fushimizu" water. It has a dry taste with a balanced texture and contains no preservatives, sulfates and gluten, making this a pure sake made of only the finest ingredients.
