'Gonzalez Byass Jerez: The Heart and Soul of Gonzalez Byass Gonzalez Byass was founded in 1835 by Manuel Maria Gonzalez and remains in family hands today, now in the fifth and sixth generation. Founded in Jerez de la Frontera, south of Spain, in the heart of Sherry country, it is dedicated to the production of high-quality sherries and stands as a cornerstone of the esteemed Sherry Triangle. The winery showcases the wide and fascinating universe of Sherry with each wine bearing the imprint of the region's distinctive character. They offer a vast range that includes Amontillados, Oloroso, Palos Cortados, Medium, Cream and Pedro Ximenez, presented in various age ranges. Some of them, such as those aged 12 or 30 years, are exemplary in their category, while others have become singular and rare oenological gems. These gems, like the V.O.R.S. (Very Old Rare Sherry), with examples such as Del Duque, Apostoles, Matusalem and Noe, stand out for being authentic objects of desire for collectors. Furthermore, Gonzalez Byass offers unique and unreplicable wines, which reflect the wisdom acquired during almost two centuries of history. Each of these brands is an ambassador of Sherry Wines, representing the past, present, and future of this iconic region. '

Tasting Notes

Matusalem is a cream Sherry aged for 30 years. It is classified as a VORS Sherry which is the highest age category from Jerez. Matusalem is a blend of 75% Palomino (Oloroso) and 25% PX. The wines are aged separately in American oak Sherry casks for 15 years and then a further 15 years as a blend. After 30 years in cask, it has acquired an intense mahogany color with profound aromas of dried fruits, raisins, spices and mature oak. On the palate smooth and sweet, long and velvety. This wine shows an interesting bittersweet finish due to the mix of the sweet Pedro Ximenez and the bitter tannins from the oak. Ideal with blue cheeses such as Stilton. Also perfect as a dessert wine with fruit pudding or apple pie.
