Tasting Notes

Noe is a Pedro Ximenez Sherry aged for 30 years. It is classified as a VORS Sherry which is the highest age category from Jerez. Pedro Ximenez is a white grape variety which is dried in the sun for up to two weeks until it turns into a raisin. The wine is aged for 30 years in American oak Sherry casks. As a result of the drying of the PX grape Noe shows an intense ebony color, nearly opaque with dense legs due to the high sugar content. On the nose aromas of mature fruit such as figs, coffee and spice. On the palate sweet and silky with surprising freshness. Noe is a dessert wine great with vanilla ice cream and acidic fruits. However, it is also great to be enjoyed on its own. Serve slightly chilled.
