1944 - 12 family-run sake breweries from Akita prefecture joined to form what is now, Takashimizu Brewery. FUN FACT: Takashimizu means "high spring water" 1950 - the brewery built a new brewing institution, bottling factory and low temperature storage warehouse to improve production capacity. 1990 - the first (and only) rice polishing facility in Akita was built 2009 - Shimizu-No-Mai Pure Series was born out of a partnership with Takashimizu Brewery and Terlato Wines, bringing premium sake to the US.

Tasting Notes

Hints of orange peel and light floral notes, with an underlying minerality. Fresh and well-structured, with subtle notes of pear and Fuji apple.
